Zeina Whole Fenugreek 420 g

Zeina Whole Fenugreek is the hard amber seed known around the Gulf as helba, angular and almost stone-like, smelling of maple and burnt sugar with a distinct bitter edge. A short toast in a dry pan, thirty seconds or so, tames much of that bitterness and brings out the sweeter side; push it too far and it turns harsher, so keep the seeds moving. Soak them overnight and whip the softened seed into hilbeh, the pale whipped relish spooned onto saltah and eaten with malooga bread. Ground seed seasons Yemeni and Gulf stews, flatbread and pickles, and a few whole seeds add depth to a lentil pot. Supplied in a resealable pouch. Store in a cool, dry place away from direct sunlight.

الحلبة الحبّ من زينة بذور صلبة بلون العنبر تُعرف في الخليج بالحلبة، زواياها حادة وقوامها يقارب الحجر، برائحة تشبه شراب القيقب والسكر المحروق مع حدّة مرّة واضحة. تحميصها القصير في مقلاة جافة نحو ثلاثين ثانية يهدّئ معظم تلك المرارة ويُبرز جانبها الأحلى؛ والمبالغة في التحميص تزيدها لذعاً، فيلزم التحريك المستمر. تُنقع البذور طوال الليل ويُخفق ما لان منها لتحضير الحلبة المخفوقة التي تُوضع على السلتة وتُؤكل مع خبز الملوج. والبذور المطحونة تتبّل يخنات اليمن والخليج والخبز والمخلّلات، وحبّات قليلة كاملة تعطي عمقاً لقدر العدس. تأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
