Zeina Whole Cumin 210 g

Zeina Whole Cumin is the uncrushed seed: small ridged crescents in a light brown, dry and loose in the hand. Whole seed holds its aroma far longer than ground cumin, and the difference shows the moment it meets heat. Toast the seeds in a dry pan for under a minute, until they darken a shade and smell smoky, then crush them in a mortar for the freshest cumin any dish can have. Or bloom them whole in hot oil or ghee at the start of a stew, a daal or a rice pot so the flavour carries through the oil. Whole seeds also go into bread dough, kebab mixtures, pickling brine and warm balila finished with lemon. Supplied in a resealable pouch. Store in a cool, dry place away from direct sunlight.

الكمون الحبّ من زينة هو البذرة غير المجروشة: هلالات صغيرة مضلّعة بلون بني فاتح، جافة سائبة في اليد. والحبّ الكامل يحفظ عطره أطول بكثير من الكمون المطحون، والفرق يظهر لحظة ملامسته للحرارة. يُحمّص في مقلاة جافة أقل من دقيقة حتى يغمق لونه درجة وتفوح منه رائحة دخانية، ثم يُدقّ في الهاون للحصول على أطزج كمون يمكن أن يحمله طبق. أو يُحمّر كاملاً في زيت أو سمن ساخن في بداية اليخنة أو الدال أو قدر الأرز لتنتقل النكهة في الزيت. ويدخل الحبّ الكامل كذلك في عجين الخبز وخلطات الكباب وماء المخلّل والبليلة الساخنة المنكّهة بالليمون. يأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
