Zeina Whole Cloves 180 g

Zeina Whole Cloves are unopened flower buds, dried hard and dark brown, each shaped like a small nail with a round head. The aroma is intense and sweet with a numbing, almost peppery warmth, and one bud carries a long way, so count them rather than pour. Stud an onion with three or four and drop it into stock, or press them into lamb and beef before slow cooking. Cloves belong in kabsa and biryani rice, in karak and spiced tea, in pickling jars with vinegar and salt, and in fruit compote and rice pudding. Grind them fresh with cardamom and cinnamon for a home blend. Take the whole buds out of the pot before it reaches the table. Supplied in a resealable pouch. Store in a cool, dry place away from direct sunlight.

القرنفل الحبّ من زينة براعم زهر غير متفتّحة، مجففة صلبة بلون بني غامق، كل واحدة منها بشكل مسمار صغير برأس مستدير. عطره كثيف حلو مع دفء مخدّر يقارب الفلفل، والبرعم الواحد يمتد أثره بعيداً، فتُعدّ الحبّات ولا تُصبّ. تُغرز ثلاث أو أربع حبّات في بصلة وتُلقى في المرق، أو تُغرز في لحم الغنم والبقر قبل الطهي الطويل. ومكان القرنفل في أرز الكبسة والبرياني، وفي الكرك والشاي المبهّر، وفي برطمانات المخلّل مع الخل والملح، وفي كومبوت الفواكه والمهلبية. ويُطحن طازجاً مع الهيل والقرفة لخلطة منزلية. وتُرفع الحبّات الكاملة من القدر قبل وصوله إلى السفرة. يأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
