Zeina Soup Spices

Zeina Soup Spices are put together for the soup pot rather than the grill: a soft olive-brown blend, medium-fine, that smells of cumin, coriander, dried herbs and a little black pepper, savoury and rounded with no chilli to speak of. Add a teaspoon early, with the onion and oil, so the flavour has time to spread through the liquid, then let the pot simmer. It suits red lentil shorba finished with lemon, vegetable and barley soup, tomato soup, freekeh and oat soups, and pumpkin or courgette purees. It also seasons the water for boiled vegetables and gives a plain broth more character. A Ramadan iftar regular. Comes in a resealable pouch. Store in a cool, dry place away from direct sunlight.

بهارات الشوربة من زينة مصمّمة لقدر الشوربة لا للمشاوي: خلطة بلون زيتوني بني هادئ، متوسطة النعومة، تفوح منها رائحة الكمون والكزبرة والأعشاب المجففة وقليل من الفلفل الأسود، مالحة متوازنة وبلا حِرافة تُذكر. تُضاف ملعقة صغيرة مبكراً مع البصل والزيت ليأخذ الطعم وقته في الانتشار داخل السائل، ثم يُترك القدر على نار هادئة. تناسب شوربة العدس الأحمر المنهاة بالليمون، وشوربة الخضار بالشعير، وشوربة الطماطم، وشوربات الفريكة والشوفان، ومهروس القرع أو الكوسا. تُتبّل بها كذلك مياه سلق الخضار فتمنح المرق العادي شخصية أوضح. ضيف دائم على مائدة إفطار رمضان. تأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
