Zeina Sesame Seeds 300 g

Raw and unroasted, Zeina Sesame Seeds are small ivory-white ovals with a smooth, faintly waxy surface and a mild, milky taste that only turns nutty once heat is applied. Toast them in a dry pan over a low flame, shaking without pause, until they colour to pale gold and start to smell fragrant, then use them as a garnish. Left raw, they are the starting point for tahini and for halva, and they bake beautifully into bread crust, kaak, breadsticks and simit, where the oven does the toasting for you. Ground, they thicken sauces and dressings. Keep them out of the pan altogether when a dish needs a soft, quiet flavour. Supplied in a resealable pouch. Store in a cool, dry place away from direct sunlight.

السمسم من زينة حبوب نيئة غير محمّصة، بيضاوية صغيرة بلون أبيض عاجي وسطح ناعم شبه شمعي وطعم هادئ حليبي لا يتحوّل إلى جوزي إلا بعد الحرارة. يُحمّص في مقلاة جافة على نار هادئة مع تحريك متواصل حتى يميل لونه إلى الذهبي الفاتح ويبدأ عطره بالظهور، ثم يُستخدم للتزيين. وإذا بقي نيئاً فهو أساس الطحينة والحلاوة الطحينية، ويُخبز في قشرة الخبز والكعك وأصابع الخبز والسميت حيث يقوم الفرن بالتحميص عنك. ومطحوناً يُسمّك الصلصات والتغميسات. ويُترك بلا تحميص إذا كان الطبق يحتاج طعماً هادئاً ناعماً. يأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
