Zeina Palestinian Sumac Seeds 350 g

Zeina Palestinian Sumac Seeds are the coarsely ground berries of the sumac shrub, a slightly damp wine-red crumb that stains the fingertips. Sourness is the whole point: it lands like lemon but rounder and less piercing, with a faintly fruity, tannic finish, and unlike juice it adds no liquid to a dish. This is the last thing to touch musakhan before it reaches the table, dusted over the onions and taboon bread with the roast chicken. Shake it across fattoush, grilled kebab, sliced raw onion, labneh, hummus and fried eggs, or mix it into a marinade for fish. A pinch lifts plain rice and roast vegetables too. Supplied in a resealable pouch. Store in a cool, dry place away from direct sunlight.

السماق الفلسطيني من زينة حبوب شجيرة السماق مجروشة جرشاً خشناً، فتافيت رطبة قليلاً بلون النبيذ الأحمر تصبغ أطراف الأصابع. الحموضة هي جوهره: تشبه الليمون لكنها أكثر استدارة وأقل نفاذاً، بنهاية فاكهية عفصة خفيفة، وخلافاً للعصير لا يضيف أي سائل إلى الطبق. هو آخر ما يلمس المسخّن قبل وصوله إلى السفرة، يُرشّ على البصل وخبز الطابون مع الدجاج المشوي. يُنثر على الفتوش والكباب المشوي والبصل النيّء واللبنة والحمص والبيض المقلي، أو يُخلط في تتبيلة السمك. ورشّة منه ترفع الأرز الأبيض والخضار المحمّرة كذلك. يأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
