Zeina Ground Cloves 100 g

Ground from whole dried buds, Zeina Ground Cloves is a deep reddish-brown powder carrying one of the most concentrated aromas on the spice shelf: sweet, warm and sharply penetrating, with a resinous, tobacco-like edge. Because it is so strong it is measured in pinches. Use it in kabsa, machboos and biryani spice blends, in slow-cooked lamb and tomato stews, in pickling and in rice, and on the sweet side in maamoul, date filling, carrot cake, gingerbread and hot fruit drinks. It also rounds out karak tea alongside cinnamon and cardamom. An eighth of a teaspoon is enough for a large pot; more will take over the dish. Supplied in a resealable pouch. Store in a cool, dry place away from direct sunlight.

القرنفل المطحون من زينة مطحون من براعم كاملة مجففة، مسحوق بنّي محمرّ غامق يحمل واحداً من أقوى العطور على رفّ البهارات: حلو دافئ نفّاذ بحدّة راتنجية تذكّر بالتبغ. ولأنه شديد القوة يُقاس بالرشّات. استخدمه في خلطات بهار الكبسة والمكبوس والبرياني، وفي اللحم واليخنات بصلصة الطماطم على نار هادئة، وفي المخللات والأرز، وعلى الجانب الحلو في المعمول وحشوة التمر وكيك الجزر وخبز الزنجبيل ومشروبات الفواكه الساخنة. يكمّل كذلك شاي الكرك مع القرفة والهيل. ثُمن ملعقة صغيرة يكفي لقدر كبير، وأكثر من ذلك يسيطر على الطبق. يأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
