Zeina Green Cardamom

Whole green pods, sorted by size and packed with the dark seeds intact: Zeina Green Cardamom is the benchmark form of the spice, and the one most Gulf kitchens keep in quantity. Split a pod between your fingers and the aroma arrives cool and resinous, sweet-citrus with a faint eucalyptus lift, far stronger than the pale bleached grades. Bruise a handful into the dallah for Saudi coffee, add pods whole to kabsa, mandi and biryani rice, tuck them into slow-cooked lamb, or grind them fresh for cakes, luqaimat syrup and rice pudding. Cracking them just before use keeps the perfume at full strength. Supplied in a resealable pouch. Store in a cool, dry place away from direct sunlight.

حبوب خضراء كاملة، مفروزة حسب الحجم ومعبّأة وحبّاتها الداكنة داخلها: الهيل الأخضر من زينة هو الشكل المرجعي لهذا البهار، وأكثر ما تحتفظ به المطابخ الخليجية بكميات. اشقق قرناً بين أصابعك ليصلك عطر بارد راتنجي، حلو حمضي بلمسة كافورية خفيفة، أقوى بكثير من الأنواع الفاتحة المبيّضة. تُدقّ حصة منها في الدلّة للقهوة السعودية، وتُضاف كاملة إلى أرز الكبسة والمندي والبرياني، وتُدسّ في اللحم على نار هادئة، أو تُطحن طازجة للكيك وشيرة اللقيمات والمهلبية. كسرها قبل الاستخدام مباشرة يحفظ العطر بكامل قوّته. تأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
