Zeina Gold Cardamom

Zeina Gold Cardamom is whole bleached pods, blonde to pale ivory rather than green, with the seeds still sealed inside. The lighter colour comes with a softer character: the aroma is floral and delicately sweet, noticeably milder than green cardamom, which is why many Saudi households prefer it for qahwa, where it should perfume the cup without dominating the coffee. Bruise a few pods and add them to the dallah with a pinch of saffron, or drop them whole into rice, milk puddings and stewed fruit. Their pale shell also looks handsome scattered over a serving dish or set out beside dates in the majlis. Packed in a resealable pouch that shields the pods from light and air. Store in a cool, dry place away from direct sunlight.

الهيل الذهبي من زينة حبوب كاملة مبيّضة، لونها أشقر يميل إلى العاج الفاتح لا إلى الأخضر، وحبّاتها لا تزال محفوظة داخل القرن. اللون الأفتح يأتي معه طابع أرقّ: عطر زهري بحلاوة رقيقة، أهدأ بوضوح من الهيل الأخضر، ولهذا تفضّله كثير من البيوت السعودية للقهوة العربية حيث يجب أن يعطّر الفنجان دون أن يغلب طعم القهوة. تُدقّ بعض الحبوب وتُضاف إلى الدلّة مع رشّة زعفران، أو تُوضع كاملة في الأرز والمهلبية والفواكه المطبوخة. وقشرتها الفاتحة تبدو أنيقة أيضاً عند نثرها على طبق التقديم أو وضعها بجانب التمر في المجلس. تأتي في كيس قابل لإعادة الإغلاق يحمي الحبوب من الضوء والهواء. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
