Zeina Fried Onion has already done the slowest job in the kabsa recipe for you: the slices are cut thin, fried to a deep golden brown and drained crisp, ready to lift straight from the pouch. No peeling, no twenty minutes at the stove and no smoke in the kitchen. Scatter a handful over kabsa, mandi, biryani, jareesh and harees just before serving, fold it through mujaddara and rice, or stir it into stews and soups where it melts down and deepens the flavour. It is also good over labneh, salads and grilled meat. Keep the pouch sealed between uses so the pieces stay crisp, and add them at the last moment. Store in a cool, dry place away from direct sunlight.

البصل المقلي من زينة أنجز عنك أطول خطوة في وصفة الكبسة: شرائح رقيقة مقلية إلى لون ذهبي غامق ومصفّاة مقرمشة، جاهزة للاستخدام مباشرة من الكيس. لا تقشير ولا عشرون دقيقة أمام الموقد ولا دخان في المطبخ. وزّع حصة منه على الكبسة والمندي والبرياني والجريش والهريس قبل التقديم، أو قلّبه مع المجدرة والأرز، أو أضفه إلى اليخنات والشوربات حيث يتفكّك ويعمّق الطعم. يناسب كذلك اللبنة والسلطات والمشويات. أغلق الكيس بعد كل استخدام لتبقى الشرائح مقرمشة، وأضفها في اللحظة الأخيرة. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
