Zeina Crushed Thyme 60 g

Zeina Crushed Thyme is dried thyme leaf broken down to a coarse green rub, and nothing else: no sumac, no sesame, no salt, so it is a single herb rather than a za'atar blend. Rubbed between the fingers it smells warm, dry and slightly minty, with the savoury edge that stands up to charcoal. Mix it with olive oil, lemon and garlic as a marinade for chicken, lamb chops and fish, toss it with potatoes before roasting, spoon it over labneh and white cheese, or knead it into bread and manakish dough. It also seasons tomato sauces and lentil soup. Add it early in cooking so the leaf has time to soften. Supplied in a resealable pouch. Store in a cool, dry place away from direct sunlight.

الزعتر المجروش من زينة ورق زعتر مجفّف مجروش جرشاً خشناً، ولا شيء غيره: لا سماق ولا سمسم ولا ملح، فهو عشبة واحدة لا خلطة زعتر. افركه بين أصابعك لتشمّ عطراً دافئاً جافاً بلمسة نعناعية وحدّة مالحة تصمد أمام الفحم. اخلطه بزيت الزيتون والليمون والثوم كتتبيلة للدجاج وريش اللحم والسمك، وقلّبه مع البطاطس قبل التحمير، وضعه فوق اللبنة والجبن الأبيض، أو اعجنه في خبز المناقيش. يتبّل أيضاً صلصات الطماطم وشوربة العدس. أضفه مبكراً في الطهي ليأخذ الورق وقته حتى يلين. يأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
