Zeina Coffee Peel 140 g

Long before the bean was roasted and ground, it was the husk that went into the pot: Zeina Coffee Peel is qishr, the dried outer skin of the coffee cherry, still the everyday hot drink of Yemeni and southern Saudi majlis. The pieces are light, papery and reddish-brown, and they smell of dried fruit and tobacco. Simmer two tablespoons in a litre of water for ten minutes with bruised ginger and a cinnamon quill, sweeten with sugar or date syrup, and pour into small cups. The liquor is a clear reddish-brown, and the taste is fruity and tart, closer to tea than to coffee, with far less caffeine in the cup than a brew made from the beans. Packed in a resealable pouch. Store in a cool, dry place away from direct sunlight.

قبل أن يُحمّص حبّ البن ويُطحن كان القشر هو ما يوضع في القدر: قشر القهوة من زينة هو القشر الخارجي المجفّف لثمرة البن، ولا يزال المشروب الساخن اليومي في مجالس اليمن وجنوب السعودية. قطعه خفيفة ورقية بلون بنّي ضارب إلى الحمرة، ورائحته تجمع الفاكهة المجففة والتبغ. اغلِ ملعقتين كبيرتين في لتر ماء عشر دقائق مع زنجبيل مدقوق وعود قرفة، وحلِّ بالسكر أو دبس التمر، وصبّ في فناجين صغيرة. المشروب بلون بنّي محمرّ صافٍ وطعمه فاكهي حامض أقرب إلى الشاي منه إلى القهوة، وكافيينه في الفنجان أقل بكثير من مشروب حبّ البن. يأتي في كيس قابل لإعادة الإغلاق. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
