The powder is a tawny orange-brown, finely ground, and smells of cinnamon and clove with a dried-fruit sweetness underneath. Heat is very low, closer to fragrant than fiery. Bloom a spoonful in ghee with onion before the rice goes in, then add chicken, grated carrot and a handful of raisins and let everything steam together. The same blend seasons tomato-based chicken stews and oven-roasted carrots well. Serve with fresh salad and a bowl of daqoos. Comes in a resealable pouch that keeps the grind loose and aromatic. أرز البخاري هو الطبق الذي صُنعت من أجله بهارات البخاري من زينة، فهي التي تمنح الرز البخاري لونه الآجُري ودفئه الحلو المالح المميّز. المسحوق برتقالي بني فاتح، ناعم الطحن، وتفوح منه رائحة القرفة والقرنفل مع حلاوة فواكه مجففة في الخلفية. حرارته منخفضة جداً، أقرب إلى العطر من الحِرافة. تُحمّر ملعقة منها في السمن مع البصل قبل إضافة الأرز، ثم يُضاف الدجاج والجزر المبروش وحبات الزبيب ويُترك الجميع ليتبخّر معاً. الخلطة نفسها تناسب يخنات الدجاج بالطماطم والجزر المحمّر في الفرن. تُقدّم مع سلطة طازجة وطبق دقوس. تأتي في كيس قابل لإعادة الإغلاق يحفظ المسحوق ناعماً عطرياً. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
