Zeina Anise 260 g

Whole aniseed is what fills every pouch of Zeina Anise: small ridged seeds, grey-green and pointed, with a sweet liquorice scent that carries the moment they meet hot water. Steep a teaspoon in a cup just off the boil for five minutes and strain for the amber yansoon drink poured after dinner and through Ramadan evenings. In baking the seeds are just as at home, scattered whole through kaak, aniseed biscuits and sweet breads, or crushed lightly into date filling and syrup. A few seeds also lift slow-cooked meat and fish stock. Toast them briefly in a dry pan first if you want the aroma to open up further. Supplied in a resealable pouch that keeps the seeds aromatic. Store in a cool, dry place away from direct sunlight.

يأتي اليانسون من زينة بحبّاته الكاملة الصغيرة المضلّعة ذات اللون الرمادي المخضرّ، ورائحة حلوة تشبه عرق السوس تنطلق لحظة ملامسة الماء الساخن. تُنقع ملعقة صغيرة في فنجان من ماء وشك الغليان خمس دقائق ثم تُصفّى، فتحصل على مشروب اليانسون الكهرماني الذي يُقدّم بعد العشاء وفي ليالي رمضان. وفي المخبوزات يحضر بالقدر نفسه، إذ يُوزّع كاملاً في الكعك وبسكويت اليانسون والخبز الحلو، أو يُدقّ قليلاً مع حشوة التمر والشيرة. حبّات قليلة منه تُغني كذلك مرق اللحم والسمك. حمّصه لحظات في مقلاة جافة إن أردت عطراً أقوى. يأتي في كيس قابل لإعادة الإغلاق يحفظ عطر الحبّات. يُحفظ في مكان بارد وجاف بعيداً عن أشعة الشمس المباشرة.
