The shells are firm and unsplit, and the aroma is the deepest of the cardamom grades in this range: still cool and citrus-sweet at the core, but rounder, toastier and touched with smoke. Bruise a few pods and let them steep in the dallah with saffron for a fuller-flavoured qahwa, or add them whole to rice, slow-cooked lamb and dried-fruit compotes. Their strong colour also makes a striking garnish on a coffee tray. Grind only what you need, since the aroma fades once the shell is broken. Comes in a resealable pouch.
