Because the shell is already broken, it infuses much faster than whole pods and needs no pestle at the stove. The scent is cool and resinous with citrus and a whisper of camphor. Spoon it straight into the dallah for qahwa, into karak tea as it comes to the boil, over kabsa and mandi rice, or into rice pudding, cake batter and luqaimat syrup. A quarter teaspoon is enough for one pot of coffee. Strain the coarse pieces out of drinks before pouring if you prefer a clear cup. Supplied in a resealable pouch.
